Kings Roll
Dough:
Mix together:
Yeast - 2 pkgs.
Milk - 1 cup (warm) milk.
Let rest 5 minutes and then add:
2/3 cup of soft butter.
1/4 cup of sugar.
Eggs - 1 whole and and the yolks of 4 more. Save the whites for the filling.
1 1/2 tsp. of salt.
5 1/2 cups of all purpose flour (approx.)
1 grated lemon rind. (optional)
2 tsp. vanilla. (optional)
Mix together and then let rest for 10 minutes.
Knead by hand for 10 minutes.
Cover with plastic in a bowl and refrigerate overnight (8 hours).
FILLING
1 cup sugar (brown or white)
1 stick soft butter.
1 cup ground walnuts or pecans.
1 tbsp cinnamon.
A pinch of salt.
Add some of the egg whites until moist.
Mix all ingredients together and set aside.
Roll out the dough till it's about 12" x 24".
Spread the filling evenly over the dough.
Hand roll the dough into a log and then cut in two. You could also cut them
smaller to make cinnamon rolls.
Brush the surface with your remaining egg whites.
Place on a flat cookie sheet (side by side) and place in the oven (turned off) on
the upper shelf and then place a pan of hot water on the lower shelf to let them rise for 20 to 40 minutes.
Remove the sheet pan and the pan of water from oven.
Preheat the oven to 360 degrees and place the sheet pan on the middle shelf.
Bake for 20 to 40 minutes until the tops are golden brown.
Remove from oven and rub a stick of butter over the top, or sprinkle with powdered
sugar (or both!)
